What toxins are you specifically talking about?
Setting up a diet is really simple in my mind:
Set calories.
Set protein.
Set fat.
Set carbs.
Fill in the remainder of your calorie allotment with whatever you want.
I could go into detail on each of those if you'd like, but making it any more difficult than that is silly.
Not to mention, many don't even have to count calories. By simply choosing "smarter" foods, their calories are self-regulated. Most foods that are considered healthy satiate you while avoiding such a large calorie load, so it becomes harder to overeat.
