Yield: 6 Pancakes Ingredients: 2/3 cup all-purpose flour, unsifted
2 tsp Sugar
1/4 tsp Salt
4 Eggs, large, beaten
1/2 cup Milk

2 cups Apple slices
1 cup Apple juice
1/8 cup Sugar
1/4 tsp Cinnamon
Low-fat cooking spray


Preparation: Sift together the flour, 2 tsp sugar and the salt.

Beat eggs & milk together. Mix together flour and salt. Gradually add flour mixture to milk mixture and beat until smooth. Saute apples in apple juice until tender. Mix sugar and cinnamon together and toss with apples. Spray skillet with cooking spray. Pour in the batter to a depth of a about 1/4 inch. When set place 1/4 of the apples on top, cover with more batter. Fry pancake until lightly brown on both sides. Keep warm and repeat procedure until all batter and apples are used up.
