Swordfish with Orange Relish

Yield: 4 Servings Ingredients: 4 each Swordfish steaks, 6-oz each
3 tbsp Olive oil
1 Juice of one lemon
3 cloves Garlic, crushed Salt & black pepper

2 each Orange, peeled, separated into sections, and diced
3 tbsp Olive oil
2 tbsp Basil, fresh, chopped

Preparation: 1. Make the marinade: in a shallow nonmetallic dish, combine the olive oil, orange and lemon juices, garlic, and salt and pepper to taste. Turn the swordfish steaks in the marinade, cover, and leave to marinade in the refrigerator for at least 1 hour.

2. Make the orange relish: in a bowl, combine the oranges, olive oil, basil, and season with salt and pepper to taste.

3. Remove the swordfish from the marinade, reserving the marinade. Place the steaks under the broiler, 3 in from the heat, and broil, basting once or twice with the marinade, for 5 minutes on each side or until the fish is opaque and flesh flakes easily. Serve immediately, with the relish.
