Use the Instant Pot’s sauté function and give it a moment to warm up. Add the olive oil. When hot, add chicken, onion and garlic. Cook until the onions become translucent.  Add the broth, rice, garlic powder and black pepper, stirring well. Turn off the sauté. In a bowl, whisk the flour into the milk and set aside. Cook on manual high pressure for 5 minutes, then use quick release.  When safe, open the lid and add the milk and flour mixture.  Stir until well combined. Add the cheese and broccoli. Stir until well combined. Serve and enjoy!

Quick and Easy Salmon (from frozen)

Pour the lemon juice and water into the bottom of the Instant Pot insert. Add the metal steamer rack. Place the salmon fillets on the steamer rack.  Sprinkle the dill over the fish, then lay the lemon slices on top. Lock the lid and use the manual pressure cook setting for 5 minutes.  Do a quick release, sprinkle with pepper and serve with brown rice and green beans.
