    Festive for Halloween & Thanksgiving!

    This lovely autumn recipe I got from weight watchers.

    Level of Difficulty: Easy

    1 Tbsp vegetable oil
    1 medium onion(s), chopped
    1 medium apple(s), chopped
    1 small carrot(s), chopped
    2 tsp ginger root, grated
    3 3/4 cup(s) pumpkin (raw 1-inch cubes), deseeded and chopped
    3 1/2 cup(s) broth, any type
    1/4 tsp ground nutmeg, or all spice
    1/8 tsp black pepper, freshly ground
    1/8 tsp table salt
    1 tsp parsley, chopped, to garnish

    * Heat the vegetable oil in a large saucepan and sauté the onion, apple and carrot for 3 - 4 minutes, until softened. Add the ginger and stir well.

    * Add the pumpkin (or butternut squash) and stock to the saucepan. Bring to the boil, then simmer gently without a lid for 20 minutes, until the vegetables are tender.

    * Transfer the soup to a blender or food processor and blend for 15 seconds, or until smooth. Return to the saucepan, reheat and season to taste with allspice or nutmeg, salt and pepper. Serve, sprinkled with chopped fresh herbs.

    I'm going to do a "practice run" of this recipe this weekend. Thank you so much for sharing it. My mouth is watering just reading through the ingredients list! Do you know if it freezes well? It looks like it would and I'd love to do a double batch and then freeze it for great lunches in future weeks.

      This recipe looks nothing but yummy! It's perfect for this time of year, too. I'm going to make it this weekend to test out if I can do it right (my cooking skills are off-and-on) and then if it works, I'll have a great recipe for next weekend when I have people over. Thanks a million for sharing this!
