Best eggplant parm recipe?

Looking for a good eggplant parm recipe. With dairy cheese or plant-based. Either is fine.I just don't want it to be mushy!

alternate layers of eggplant and zucchini. It makes it even better!

That surprises me. I would have buessed that cooking it twice make it even mushier.

Choose your favorite recipe, but bake your eggplant first, then bread it and do the rest, baking it a second time. It helps to pull out the extra moisture that makes it mushy if you don't do it this way.
