Fillet With Basil Butter Sauce

Ingredients:

Pepper, Black, to taste
1/4 tsp Paprika
1/2 cup Basil, slivered, fresh
2 tbsp Butter, (unsalted)

2 tbsp Olive Oil
1 fl oz Lemon Juice, fresh
24 oz Flounder, 4 fillet (6 oz each)
Salt, to taste

Preparation:

Preheat the broiler. Cover a baking sheet with aluminum foil. Melt the butter in a small saucepan. Add the olive oil and lemon juice, and cook over low heat for 5 minutes. Cover and remove from the heat. Lay the flounder fillets on the prepared baking sheet, brush them with a bit of the butter sauce, and sprinkle with salt, pepper and paprika. Broil the fish as close to the heat as possible for 4 minutes. Transfer it to a platter, top with the lemon butter sauce and fresh basil and serve
immediately.
